$5 Vegan Breakfast For Your Week: Pear Cornbread and The Easiest Nut Milk Ever

I absolutely love making posts like this because I feel like they’re helpful, but they also allow me to brainstorm new and unique recipes that you can make inexpensively (and vegan too!)
This week’s recipe is for pear cornbread, which is served with the easiest nut milk you’ll ever make. The total for all the ingredients for this recipe is $5.25, depending on the size and weight of the pears you choose.
The Ingredients


You may be wondering, “what is peanut butter doing there?” but trust! That’s how we’re going to make the easiest nut milk ever.
The flaxseed is going to help us make a vegan egg, which we can then put in our corn muffin mix to bind it together. This breakfast basically throws itself together!
The Pear Cornbread


We’ll start by finely dicing our pears. I used two small pears, but if your pears are bigger you may only need one.
I mixed 1 tablespoon of ground flaxseed with 3 tablespoons of water in a small dish and allowed it to sit for a few minutes before adding it to the corn muffin mix, along with 1/3 cup of water.
Add the diced pears to your mix and fold them in, then pour the mixture into a parchment-lined (or greased) loaf pan.
Bake the pear cornbread at 400F for about 30 minutes, or until a toothpick inserted in the center comes out clean.
The Easiest Nut Milk Ever


I found this idea on TikTok and it blew my mind. Literally all you need to do is blend 1 tablespoon of peanut butter and 1 cup of water together and bam! You have the easiest nut milk on the planet.
It’s also great because this is much cheaper than regular nut milk. This jar of peanut butter cost me $1.99 and has 28 tablespoons of peanut butter in it, making each cup of nut milk just 7 cents!
The Meal

This meal came together so easily! The pear cornbread tasted really good warm with some vegan butter spread on it (which is optional but great if you have it).
