What I Ate Wednesday #5: Recipe Testing

Welcome to another What I Ate Wednesday! I hope it finds you well. I ate a lot of new things today, mainly because I was testing recipes for this here blog. So I guess you’re about to get a little snapshot of potential recipes to come.

Breakfast: This was my first recipe test of the day, a vegan mug crumb cake! It was really good, though I might make the portion a little smaller next time. I almost made the hilarious mistake of putting seitan flour in the crumble topping instead of chickpea flour! Some days the coffee just doesn’t kick in fast enough ? At least I caught it before I added it to the cake.

Lunch: It was more like a quick bite before I rushed out of the house, but it was these leftover Pizza Bombs. These are also really good, but a little big. I might make a more bite-sized version to post here.

Afternoon Snack: I had a snack of delicious baba ganoush, which I topped with a sprinkle of salt, pepper and smoked paprika, as well as a drizzle of olive oil. I ate it with a toasted whole wheat oat flax pita bread. I’m not a huge fan of eggplant, but I think baba ganoush is absolutely delicious!

Dinner: I did some impromptu recipe testing with these southwest stuffed mushrooms! They were really a delicious treat (with a kick, mind you). But I wasn’t crazy about how the cheese melted. I’m not really sure what the problem was, but I might have to play around with the oven temperature or use different cheese.

Nighttime Snack: I wanted to keep it simple (and also incorporate a few more veggies), so I had some spicy guacamole and dipped with baby carrots. As you can probably tell by now, I like my spicy foods, so this was a nice bite to end the day on.
