This dish is inspired by one of my favorite things to get at my favorite restaurant: vegan pizza topped with eggplant. I love oven-fried (and even regularly fried) eggplant, and it charts right up there with some of my favorite pizza toppings.
I, for one, am a lover of balsamic vinegar. The unique tang of this ingredient adds just the right flavor to salads, my coveted bruschetta, even marinades. It’s also the star of today’s recipe!
