Instructions
Start by slicing your zucchini into rounds. You'll want your slices to be about 1/2 to 3/4 of an inch in thickness. Lay your slices on a rimmed baking sheet, then spray with olive oil spray and sprinkle with garlic powder. Flip and repeat on the other side.
Put your oven broiler on high setting. Broil your zucchini slices for 5 minutes, then flip and broil 5 minutes on the other side, or until fork tender but not burned. Be sure to keep an eye on your zucchini while it cooks and check it often.
Take your slices out of the oven and spoon an equal amount of marinara sauce on each one, then the cheese and any other toppings you may want. Broil again for 1-2 minutes, checking to make sure cheese is melty but not burnt. It usually only takes mine a little over a minute to be done, but all ovens are different. Just keep a close eye on them, and you'll be fine.
