These completely vegan sloppy joes are enough to make even a meat eater's mouth water, and they come together in less than an hour! Tangy, meaty, and the perfect plant-based weeknight dinner.
1cuptextured vegetable protein(I used Bob's Red Mill)
1cupvegetable broth
small white onion
small green pepper
1tbspoil(I used olive oil)
Sloppy Joe Sauce
2.5tbspdijon mustard
1.5cupstomato ketchup
3tbspbrown sugar
1.5tbspminced garlic
To Serve
4buns of choice
Instructions
In a small bowl, combine the textured vegetable protein and the vegetable broth. Allow to rehydrate for 15 minutes.
In the meantime, chop the onion and pepper. In a separate small bowl, combine the ingredients for the Sloppy Joe Sauce and set aside for now.
Heat a medium saute pan over medium heat. Add the oil, then add the chopped onion and pepper. Cook for 10-15 minutes, stirring occasionally, or until slightly soft.
Add the tvp mixture to the onion/pepper and stir. Heat, stirring semi-often, for 15 minutes, to cook through and slightly brown.
Stir in the Sloppy Joe Sauce and allow to simmer for 1-2 minutes, stirring once or twice, until heated throughout.
Spoon sloppy joe mix evenly into four buns. Serve, and enjoy!
